Opened in 2005 to revive a local sake tradition that had gone silent since the 1970s, this is the island’s only sake brewery. Its young makers carry on techniques inherited from seasoned master brewers, while also working with the local fermentation research institute to brew sake using olive yeast. A cafe and bakery on site expand the world of sake into food: sake lees soup, sake lees sweet red bean paste, and more. A breath of fresh air for the island’s sake culture.

Visiting the Terraced Rice Fields Where Sake Rice Grows
My favorite landscape on the island is Nakayama Senmaida—rice terraces layering down the mountainside one after another. About 10 years ago, we wanted to fill those fields with green again, so we started the “Sake Rice Project” with local residents, growing sake rice on fallow land. The terraces change with every season, and in that changing landscape you can feel the quiet, beautiful work of the people who tend and nurture them.
